  1. Bring the stock to a bare simmer with the tamari.
  2. Beat the eggs in a jug until completely smooth.
  3. Stir the stock in one direction and pour the egg in a thin stream as it moves.
  4. Stop stirring and let it set for ten seconds, then add the spring onion and sesame oil.
