Method

  1. Bring the stock to a simmer with the chilli, and bruised lemongrass if you have it.
  2. Simmer for ten minutes to draw the flavour out, then add the mushrooms.
  3. Add the prawns and cook for two minutes, until they curl and turn opaque.
  4. Take it off the heat before adding the fish sauce and lime juice, or the lime turns bitter.
