Method

  1. Brown the chicken in the butter and lift it out of the pan.
  2. Add the tomatoes and cumin and cook down for ten minutes until darkened.
  3. Pour in the cream, return the chicken, and simmer 15 minutes on a low heat.
  4. Pulse the cauliflower to rice and fry it dry in a separate pan for four minutes.
  5. Serve the curry over it, with the butter from the top spooned across.
