Method

  1. Brown the goat in the coconut oil in batches, so each piece colours properly.
  2. Add the onion, chilli and cumin and fry for three minutes until it smells strong.
  3. Return all the meat, add the coconut milk and enough water to cover.
  4. Simmer covered on a low heat for 90 minutes, until it pulls apart with a spoon.
  5. Uncover for the last 20 minutes to thicken the sauce.
