  1. Use the freshest salmon you can buy, and keep it cold until the moment you cut it.
  2. Slice it against the grain at a slight angle, about half a centimetre thick.
  3. Shred the daikon into fine threads and pile it on one side of the plate.
  4. Lay the salmon out in overlapping slices with the wasabi and tamari alongside.
