Method

  1. Beat the eggs with the tamari and strain them for an even texture.
  2. Oil a small pan and pour in a third of the egg, tilting to coat the base.
  3. When it is nearly set, roll it to one end of the pan with chopsticks or a spatula.
  4. Add more egg, lift the roll so it runs underneath, and roll again. Repeat once more.
  5. Cool for two minutes, then cut into thick rounds and top with spring onion.
